Plant-Forward in Practice: Proven Techniques for Real Dining Programs

Plant-forward menus are a proven way to delight diners, strengthen margins, and meet climate goals. Yet many foodservice teams don’t know the behavioral techniques that make diners reach for these dishes. Even the best ideas can stall without the time, tools, and team buy-in to put them into practice.

BITE partnered with Greener by Default and the Menus of Change University Research Collaborative to change that. Together, we brought eight research-backed techniques, from plant-based defaults to tastier dish names, into seven college and corporate dining sites. Along the way, we supported teams with messaging guidance, staff engagement workshops, and hands-on help. Across the five sites with complete data, plant-forward servings rose 28%.
