Plant-Forward in Practice: An Operator Guide
Proven ways to help guests choose plant-forward dishes, like smart defaults, craveable dish names, and prime placement, have been around for years. So why aren't more dining operations using them? BITE: Building Impact Through Eaters and Greener By Default, with support from the Menus of Change University Research Collaborative, set out to understand what it really takes to make these techniques work in day-to-day foodservice. Using research and human-centered design, they talked with foodservice teams about what holds them back, built practical guidance to address those barriers, and put eight techniques to the test at seven university and corporate dining sites. Together, the techniques drove a 28% increase in plant-forward servings.
